Homemade Tortillas

We had a lot going the last year so I haven't felt much like cooking (or doing many of the fun things I usually do). But things are settling down and I know that I am starting to feel more like my normal self because I decided to make homemade tortillas!  Yes, I am back in the kitchen and teaching the boys how to cook and bake.

I used this recipe and they turned out perfectly. I used olive oil and white-wheat flour (sounds crazy but it tastes great and has some fiber).  Rolling them was a bit of a pain, but I made sure to let the dough rest for 30 minutes and moved the dough around as I was rolling it.

They cooked up so fast and were soft and delicious.  I already made a second batch.

Duke said they tasted just like the ones you buy.  I think that is a compliment because they usually tell me that my homemade stuff tastes interesting.




It has been hot and dry but we are trying to spend as much time outside as possible.  We love swimming at the YMCA.  I have decided that I prefer swimming there than at a private pool. I love people watching and our Y's pool has huge water slides and a great little kids waterpark.  And it is cheaper than putting in our own pool.  The boys play in the sprinkler at our house like good little rednecks.



And we are spending plenty of time at our local parks.  Some of their cousins came into town and they had a blast exploring the forest with my boys.  I am always amazed how many things we can do for free around town.  We might not live out in the "suburb country" anymore, but my kids are still getting to spend plenty of time outdoors in the woods.  All kids need to be able to explore nature while Mom sits there keeping an eye on them while reading a good book.  :-)

  3. I was raised on these things. There are good with everything. I especially like them with eggs for breakfast. My other favorite way is with peanut butter & jelly. I add a little bit of white flour (you can get the unbleached kind) to make them a little softer & not so much like a cracker. You can also add a little wheat germ which gives them a nutty flavor. My grandfather never used utensils, he scooped up his food with tortillas. Now you've done it, now I have to go make some!! :-)
