CoffeeShop Christmas 5x7 Gold Frame for Print or Web!

I know everyone is busy this week. My sister Heather and her family are in town right now so I am really excited. We always have a wonderful time with them. Tomorrow we are hosting Thanksgiving here and should have a full house.  I decided to be a rebel and roast turkey thighs rather than an entire turkey as we all prefer dark meat and I don't like dealing with the mess of carving a giant turkey. :-) We are also having smoked ribs to mix it up some this year.

I am making my delicious goat-cheese mashed potatoes.  They are so simple and my own recipe! Just peel and cut potatoes into 1-2 inch chunks and boil until soft. Then pour off water, put the pan back on the hot burner and mash the potatoes with a hand masher. The heat will make the water evaporate so the potatoes will be dry and not mushy. Then I add some chunks of butter, goat cheese, a bit of half and half, and salt and pepper and mash it all together.  I don't measure anything, just add and mash and taste until they are perfect. I usually have a few helpers taste-testing them for me.  :-)

I am also making creamy butternut squash soup (also my own recipe). I sauté one cut-up large onion and a few cloves of garlic until soft. Then I throw them in my blender with one can of Coconut Milk and one can of Butternut Squash (I buy the squash at Sprouts). Then I blend until smooth and pour back into a pan on the stove. Then I add salt, pepper, and nutmeg to taste and keep on low heat for a while to make sure the flavors blend. This recipe is for 6 people and it is so delicious. My kids love it!
